The eSIM arrives by email as a QR code you scan from your phone's eSIM menu; on iOS 17.4 or newer you also get a direct-install link that skips scanning, and manual entry is available if the QR code is not recognized. Install before you fly, keep data roaming enabled, and the data package only starts counting when the eSIM first connects in the destination country (or immediately if you are already there). Top-ups are bought under the "My eSIMs" tab in your account and are processed right away, though allow up to 10 minutes if your data was fully depleted; note you can only top up the destination your eSIM was purchased for.
